Assam lemon or lemon -Citrus limon (L.) Burm f. is known for its attractive flavour, aroma and several nutritious phytochemical compounds present in the fruit as well as in juice. Lemon belongs to the genus Citrus and family Rutaceae. The plant is a shrub or small tree about 6-8 ft. height and is an evergreen tree, thrives in tropical and subtropical climates, produce a special kind of fruit (berry) - hesperidium.
